Taco Tortilla Soup

Ingredients
  

  • 1 lb 85% lean ground beef
  • 1 tbsp minced garlic OR Tastefully Simple Garlic Garlic
  • 8 cups water
  • 2 cups rotini pasta
  • 1 14.5oz can diced tomatoes, undrained
  • 1 cup whole corn kernals
  • Topping such as sour cream, shredded cheese, green onions, and fritos chips

Instructions
 

  • In a large saucepan, cook and crumble beef and minced garlic over medium-high heat, until no longer pink, about 6-8 minutes, drain
  • Stir in water and Tortilla Soup Mix. Bring to a boil; reduce heat and simmer 10 minutes, stirring occasionally
  • Stir in pasta, tomatoes and corn. Continue simmering 10-12 minutes or until pasta is done, stirring occasionally.
  • Serve with desired toppings!
