Irish Beef Stew

Ingredients
  

  • 3 tbsp olive oil
  • 2 lbs cubed beef stew meat
  • 1 medium onion
  • 3 cloves garlic, minced
  • 12 ounces beer pale lager
  • 3 1/2 cups beef broth
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp tomato paste
  • 1 1/2 tsp sugar
  • 1/2 tsp paprika
  • 1 bag baby carrots cut into thirds
  • 3 tbsp all purpose flour
  • 4 stalks celery sliced
  • Mashed Potatos

Instructions
 

  • Heat oil in a large pot or electric skillet over medium - high heat. Season the beef. Brown meat on all sides & remove to plate
  • Add onion to pot and reduce heat to low. Cook, stirring, until softened, 3 minutes. Add garlic, stirring for 1 minute.
  • Pour in beer, add broth tomato paste, Worcestershire, sugar, paprika, and 1/2 tsp salt and pepper to taste
  • Add the beef and simmer, about 1 to 1 hour, 45min
  • Add carrots, celery and other vegetables and simmer until vegetables and meat are tender, about 45 minutes.
  • Remove about 1 cup of liquid from pot and whisk in flour, then stir it back in. Bring to a gentle boil
  • Serve over Mashed Potatoes!
