Quarter your cucumber, and peel and cut carrots.
Then, heat a drizzle of oil in a large pan and add edamame and cook until browned for 3-4 minutes.
Reduce your heat and stir in miso sauce concentrate and 1 tbsp butter and stir until edamame is coated for about 1-2 minutes. Season with salt and pepper. Put your edamame on a plate to cool down.
Heat a drizzle of oil in the same pan. Add your carrots and just a bit of salt. Cook until browned, about 5-7 minutes. Remove from heat and add 1 tbsp sweet soy glaze. We will use the rest later.
Coat your carrots and place on a plate to cool down
Roughly chop cilantro and set aside. Whisk together your sesame dressing, mayonnaise and 3 tbsp of sweet soy glaze until smooth. In a large bowl, toss your cabbage and mixed greens and dressing. Add cucumbers, Carrots and edamame. Top with cilantro and peanuts!
