A few days ago, I shared my Tuscan Cheesy Tortellini, but today I want to share with you a different version of it, the Tasty Tuscan Sausage Tortellini , that is ABSOLUTELY amazing as well. This takes a lot of the “grunt work” out of the recipe because I found a sauce that is pre-made and absolutely delicious from Tastefully Simple. It is also a little less tomato based as well. I want to point out that I am not a Tastefully Simple consultant, I am just sharing my finds! I will tell you, that the Tuscan Starter Sauce is now a must have staple in my pantry!
This recipe originally came from the Tastefully Simple website, but I adapted it to add sun-dried tomatoes. I used one jar, but I actually ended up chopping the tomatoes up even smaller so that the chunks weren’t so big. I know that the Tuscan Starter Sauce does have sun dried tomatoes in it, but I wanted to have a little bit more! I also added 1 tablespoon of minced garlic! It just needed it!
One thing I love about tortellini is its FILLING! A little bit does go a long way, and your family will be satisfied! If you like your pasta a little more creamy, I would maybe use two jars of the tuscan starter sauce but it definatly was not necessary! I also serve my Italian dishes with some garlic bread and a side salad as I feel like it is the perfect pair to any Italian Dish!
Tuscan Tortellini with Sausage & Spinach
Ingredients
- 1 lb ground hot or mild italian sausage
- 1 cup reduced sodium chicken broth
- 1 jar Tuscan Starter Sauce
- 1 19 oz package Frozen Cheese Tortellini
- 3 cups fresh baby spinach leaves
- 1 jar sun dried tomatoes
- 1/2 cup half and half
- 1 tbsp minced garlic
Instructions
- In a large skillet over medium-high heat, cook sausage, crumbling into large chunks until no longer pink, about 6-8 minutes; drain
- Add chicken broth, Tuscan Starter Sauce, pasta, spinach, and sun dried tomatoes. Cover and bring to a boil. Reduce heat, simmer until pasta is cooked and spinach is wilted, stirring occassionally, about 8-9 minutes
- Stir in cheese and half and half. Cook uncovered 1-2 minutes, remove from heat and let stand 5 minutes
