I have been on a tortellini kick lately, and I love anything tuscan including this Tasty Tuscan Cheesy Tortellini! (Try our Creamy Tuscan Chicken, here!) This recipe has minimal ingredients (most you will already find in your home) and is super budget friendly! In all, the recipe took less that 30 minutes from start to finish. The recipe I adapted this from did not have sun dried tomatoes in it, or red pepper flakes, but I knew it just needed something more! I LOVE sun dried tomatoes, and the red pepper flakes give it the perfect kick! These are my favorite Sun Dried Tomatoes, totally worth it! You can play with how much to put in, I probably overdid it and didn’t need as many but it didn’t ruin the recipe by any means!

This recipe definatly did not need a meat, but I do wonder what it would taste like with some cubed chicken! Something I am thinking about trying for next time!

I used my Rachael Ray Skillet, I have owned and used a lot of cookware and this is by far still my favorite set! It cooks evenly and is easy to clean, and of course is super cute too! The set comes with literally everything you need, and is budget friendly as well!

The most time consuming part of this recipe was cutting the tomatoes, and that literally took no time at all, so it is perfect for supper on busy nights with minimal prep time! Its also the perfect leftover! This can be stored and refrigerated for up to 3 days! I will definitely be making this ahead of time and using it for lunches in my busy season!

Tasty Tuscan Cheesy Tortellini

This delicious cheesy tortellini is a must have recipe in your book!

Ingredients
  

  • 2 tbsp olive oil
  • 2 pounds roma tomatoes (about 8) chopped
  • 1/2 tsp salt
  • 1 jar sundried tomatoes
  • 1/4 tsp freshly ground black pepper
  • 1 pinch red pepper flakes
  • 3 cloves garlic minced
  • 2 (8 oz) packages fresh tortellini or 1 (19oz) bag frozen cheese tortellini
  • 2 cups packed baby spinach
  • freshly grated paremsan cheese for serving

Instructions
 

  • Heat the oil in a heavy-bottomed 10- or 12-inch skillet over medium heat
  • Add the roma tomatoes, sun dried tomatoes, salt, black pepper, and red pepper flakes
  • Cook until the tomatoes soften and release their juices, 5 to 6 minutes.
  • Stir in the garlic and cook until fragrant, about 1 minute
  • Increase the heat to medium-high, stir in the tortellini, stirring occassionally until tortellini is plump and tender, 3-5 minutes
  • Remove from heat and stir in the spinach until it wilts, about 1 minute.
  • Serve immediatly with grated parmesan cheese
