These Soft & Chewy Peanut Butter Cookies are an absolute must try! This simple recipe is a family favorite at our house, and is delicious each and every time!
I recently got this new Baking Sheet Set, it includes two baking sheets, two cooling racks, and two silicone baking mats and is super easy to clean and it stacks well! I have used it a few times and found that it cooks evenly as well!
I am always looking for simple cookie recipes because I love to keep them stocked in the cupboard. They are a perfect after school snack for the kiddos and always hit the spot! They also are fun to make with the kids! They love rolling them up in balls and making the criss cross pattern on the top!
What you will need:
- 1 1/3 cup all purpose flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup creamy peanut butter
- 1 large egg
How to make:
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix together butter, sugar, and brown sugar until well combined. Mix in peanut butter and blend in egg an vanilla. Add the flour mixture and mix until just combined
- Scoop dough out and shape into 1 1/2 inch balls. Place two inches apart on baking sheets. Using a fork, slightly press the fork into the top of the ball and then the opposite way doing the same.
- Bake cookies, one sheet at a time for about 9-10 minutes. Let cool on a baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
Tips for an even better cookie!
- Refrigerate the dough for an hour before pressing into cookies.
- Store in an air-tight container at room temperature for 3-4 days
- Use creamy peanut butter, preferably skippy or jiffy!
- Add chocolate chips for a fun change!
