I am back at it again with another dip today! The Saucy Taco Queso Dip is a fan favorite around here! We are huge taco fans, and huge cheese fans, so why not have the best of both worlds with this delicious dip! I really loved this Taco Queso but there was so many ingredients, so I needed to come up with something a little easier to save this busy mama some time!
I make Queso all the time, but throwing a taco twist in there was absolute YUM! There is quite a bit of a kick to it, so that’s why we call it saucy! You could make this in a skillet too, as long as you watch the cheese but I love sticking it into the crockpot and letting it smell up my house all day long!
So, because I have a large family, I use this awesome crockpot. It is a 10qt crockpot that lets you pressure cook, sterilize, slow cook, brown/sear, sauté, boil, simmer, and steam all in one, so I use it nearly every day! However, when I am making dips, I like to use the 16 oz Triple Dipper Crock-Pot! That way I can make three dips at once!

Saucy Taco Queso Dip
Ingredients
- 2 lbs Ground Beef
- 1 Large Onion
- 1 Medium Green Pepper Chopped
- 1 lb Pepper Jack Cheese Cubed
- 1 Jar Taco Sauce
- 1 Can Rotel Diced Tomatos & Green Chilis drained
- 1 4oz can Musthroom Stems & Pieces drained, chopped
- 1 can sliced ripe olives
- Tortilla chips
Instructions
- In a skillet, cook beef, onion and green pepper over medium heat until the meat is no longer pink and the peppers and onions are soft.
- Combine with rest of ingredients in a crock pot or slow cooker
- Cook until cheeses are melted.
- Serve warm with tortilla chips.
