Why have just a cookie when you could have Moms Favorite Brookie Bars!
Ingredients:
- 8 tbsp butter (for brownie)
- 1 cup granulated sugar (for brownie)
- 2 large eggs (for brownie)
- 1 1/2 tsp Vanilla Extract (for brownie)
- 1/2 cup flour (for brownie)
- 3/4 cup cocoa powder, Dutch Process or Natural
- 1/4 tsp baking powder (for brownie)
- 6 tbsp butter (for cookie)
- 1 cup packed brown sugar (for cookie)
- 2 large eggs (for cookie)
- 2 tsp vanilla extract (for cookie)
- 1 1/4 cups flour (for cookie)
- 2 tsp baking powder (for cookie)
- 3/4 tsp kosher salt (for cookie)
- 1 1/4 cups chocolate chips (for cookie)
Recipe:
- Prepare the brownie layer: In a medium saucepan, combine the butter and sugar and heat over medium until the butter is melted. Remove from heat and whisk vigorously until combined
- Once that has cooled, whisk in the eggs one at a time. Then, whisk in the vanilla
- Add the flour, cocoa powder, baking powder and salt. Stir well to combine, Transfer to a medium bowl
- To prepare the cookie batter: Wash and dry the saucepan. Combine the. butter and sugar, and heat over medium until the butter is melted. Remove from heat and whisk vigorously.
- After it has cooled down, whisk in the eggs one at a time. Whisk in the vanilla. Add the flour, baking powder and salt. Stir. Stir in 3/4 cup of the chocolate chips. Save the rest for later
- Using two cookie scoops, drop each of the batters in the prepared pan. The pattern can be random, and one dough can be on top of the other. You can also layer it, as I did by putting all of the brownie on the bottom and the cookie on the top. Make sure you have an even thickness throughout the pan. Sprinkle the rest of the chocolate chips on top.
- Bake until the top looks dry, around 20-22 minutes
- Transfer to a rack to cool completely about 45 minutes. Cut into bars and serve!,
