Low Carb Beefy Cabbage Soup

I love cabbage, making Low Carb Beefy Cabbage Soup one of my top favs! Not only is it extremely delicious, but it is also good for you too! Cabbage is full of Vitamin C, Vitamin K, and Vitamin B.

Although I would eat this even not on a diet, soup is incredibly good for you! We all know that when we cook vegetables in water, most of the nutrients are tossed when we throw the water away. With soup, all of those vitamins and minerals stay in the broth and then on its way to you! This is why soup is incredibly good for you, your immune system, and your diet too!

You could also make this in your crockpot too! So, because I have a large family, I use this awesome crockpot. It is a 10qt crockpot that lets you pressure cook, sterilize, slow cook, brown/sear, sauté, boil, simmer, and steam all in one, so I use it nearly every day!

You will need just a few ingredients to start making Low Carb Beefy Cabbage Soup

  • 1 Chopped Medium Head Cabbage
  • 1 Cup Chopped Celery
  • 1 Cup Chopped Onion
  • 1 Teaspoon Minced Garlic
  • 8 Cups Water
  • 3 Tablespoons Better than Bouillon Beef Base (or 6 beef bouillon cubes)
  • 1/4 Teaspoon Pepper
  • 1 1/2 pounds Ground Beef, browned and drain
  • 2 (15 ounce) cans organic tomato sauce
  • 1 tabelespoon Worcestershire sauce
  • 1/4 Cup Ketcup

Here is how to make it!

  1. Cook the cabbage, celery, onion and garlic in the water in a large stockpot until vegetables are tender
  2. Add Better than Bouillon, pepper, tomato sauce, and beef
  3. Bring mixture to a boil; then reduce and simmer for about 10 more minutes
  4. Stir in Worchestershire sauce and ketchup and simmer for another 10 minutes so the flavors blend well.
