If you are currently doing Keto, or even if you are not, you are going to love our Keto Creamy Tuscan Chicken recipe! It is super simple to make, and it is absolutely delicious!
The most important thing about Keto, is you want to eat 70% fats during the day (I know, it seems so wierd) 20% protein and 10% carbs. So basically low carb, high fat. There are so many articles on keto out there on the internet, so certainly do some research before jumping on board! This website is a great one to learn the basics! It seems a little intimidating at first, but I truly isn’t that hard if you set yourself up for success from the start!
So, back to the recipe! I am not a huge chicken fan, but this recipe was PERFECT! It had the perfect blend of taste with the chicken! Next time, I am going to actually cut the chicken in strips!
If your chicken tends to be dry, I pat dry, then dusted the chicken with corn starch or flour. Then I fried it in my skillet separately from other ingredients until the chicken had a bit of color on the outside. This made the world of difference!
Another great tip to keep your chicken juicy is to sear the sides of your chicken. I use this awesome crockpot. It is a 10qt crockpot that lets you pressure cook, sterilize, slow cook, brown/sear, sauté, boil, simmer, and steam all in one, so I use it nearly every day!
You will need a few ingredients for our Keto Creamy Tuscan Chicken to get started!
- 3 Boneless Chicken Breasts (we had enough sauce left over for a few more!)
- 2 Tablespoons Olive Oil
- 1 Cup Heavy Whipping Cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 cup Parmesan cheese
- 1 cup chopped spinahc
- 1/2 cup sun dried tomatoes
Instructions
- Add olive oil into a large skillet (My favorite is by Rachal Ray!)
- Cook your chicken on medium heat for 4-5 minutes per side or until no longer pink in the middle
- Remove chicken and set aside
- Add the chicken broth, heavy whipping cream, garlic powder, Italian seasoning, and parmeson cheese in the skillet until it starts to thicken.
- Add the spinach and sundried tomatoes and let simmer until your spinach is slightly wilty.
- Pour sauce over your chicken and serve.
