I am always on the lookout for new, fresh and HEALTHY recipes! We found this one and just HAD TO TRY IT OUT! It was so yummy. I think what I may do differently next time is cut the chicken into long slices, chop the tomatoes, and then layer it the same way. Then, when it is done baking, serve it over rice. It seemed like you had a huge mouthful of chicken all at once! 🙂
I am not a huge fan of chicken, so chopping the chicken into longer slices will make it much tastier. I feel like i would like more of the topping and less chicken in each bite.
My kids also werent huge fans of this meal, so I also wonder if cutting them into smaller bite size pieces with more flavor soaking up in all of the chicken would help a little!
I found it paired well with fresh green beans but I also think it would pair really well with asparagus! I am also curious to find out if this would be keto friendly, I need to do some more research on pesto!
However all in all, this is 100% a recipe that I will make again! I could foresee pairing this with a pasta on my less healthy thinking days, haha!
Ingredients
- 3-6 Chicken Breasts
- 2-4 Roma Tomatos Sliced
- Basil Pesto
- Mozzarello Cheese
Instructions
- Lay Chicken Breasts in Baking Dish Side by Side
- Cover with Pesto, depending on how much you like
- Lay two tomato slices on pesto/chicken
- Sprinkle Cheese
- Bake 400 degrees F for 30-40 min, or until no longer pink and juices run clear.
