Ham and Cheese Macaroni

My kids favorite meal is Ham and Cheese Macaroni! They prefer without the peppers, but because I like the peppers in there I just have them pick them out!

I buy the ham already cubed for convenience but if you had leftover ham from a holiday this would be a great recipe to use that up! You could make this as a freezer meal as well, store up to 6 months!

Ingredients for Ham and Cheese Macaroni

  • 3 Cups Elbow Macaroni
  • 6 Cups Broccoli Florets
  • 3 Cups Red Sweet Pepper, chopped
  • 3 cups cubed ham
  • 3 cups milk
  • 8 tsp cornstarch
  • 1/2 tsp black pepper
  • 3 cups cubed Velveeta
  • 1 cup Bread Crumbs
  • 1 tbsp butter or margarine, melted

Instructions

  1. Preheat oven to 350 degrees F. Cook macaroni according to package directions, adding broccoli and sweet pepper about the last 1-2 minutes. Combine macaroni mixture and ham in a separate casserole dish and set aside.
  2. In a small saucepan, stir milk and cornstarch, as well as pepper. Cook and stir until thick and bubbly, but DO NOT leave unattended as milk cooks fast! Add cheese until melted. Stir into macaroni mixture in casserole. Combine bread crumbs and butter and sprinkle on top!
  3. Cook in oven 45 minutes. Should be bubbly and bread crumbs will be light brown!
