If you are trying to eat healthy, this edamame salad is a great choice! The sweet soy and sesame dressing make it a tasty treat! I have found several recipes online, some even have ginger, but this one was the perfect combo of sweet and tasty for me!
Edamame are young soybeans that have been harvested before they ripen or harden. They have various health benefits, as they are naturally gluten-free and low in calories! They also contain no cholesterol and provide protein, iron and calcium making it a go-to for healthy eating!
This Edamame Salad recipe is super easy and quick to make!
- 4 Carrots
- 5 tsp Rice Wine Vinegar
- 4oz Edamame
- 2 Tbsp Miso Sauce Concentrate
- 4 TBSP Sweet Soy Glaze
- 1/4oz Cilantro
- 1 tbsp butter
- 1/2 oz peanuts
- 2oz Sesame Dressing
- 2 tbsp mayonnaise
- 4 oz Shredded Red Cabbage
- 1 Bag of Mixed Greens
- Salt and Pepper
To begin, quarter your cucumber, and peel and cut carrots. Then, heat a drizzle of oil in a large pan and add edamame and cook until browned for 3-4 minutes. Reduce your heat and stir in miso sauce concentrate and 1 tbsp butter and stir until edamame is coated for about 1-2 minutes. Season with salt and pepper. Put your edamame on a plate to cool down.
Next you are going to heat a drizzle of oil in the same pan. Add your carrots and just a bit of salt. Cook until browned, about 5-7 minutes. Remove from heat and add 1 tbsp sweet soy glaze. We will use the rest later. Coat your carrots and place on a plate to cool down.
Roughly chop cilantro and set aside. Whisk together your sesame dressing, mayonnaise and 3 tbsp of sweet soy glaze until smooth. In a large bowl, toss your cabbage and mixed greens and dressing. Add cucumbers, Carrots and edamame. Top with cilantro and peanuts!
