If you are looking for a super easy, super quick but also tasty meal for supper, Easy Cheesy Chicken Broccoli is the one! My kids absolutely loved it as well, making it kid-friendly, and most of the ingredients I had in my cupboard, making it also budget friendly! Also, anything with rice is filling, so a little bit goes a long way!
I am actually a huge fan of Rachel Ray’s Cast Iron Skillet, so if you are looking for a great skillet that is definitely one to try! I have tried several and that one works the best in my opinion! I know that some people prefer a wok, and I have heard that Rachel Ray’s Wok is absolutely fantastic too, its on my list of things to try!
If you find that your chicken is too dry, pat try, then dust the chicken with corn starch or flour. Then fry it in your skillet separately from other ingredients until the chicken has a bit of color on the outside. This made the world of difference for me!

Easy Cheesy Chicken Broccoli
Ingredients
- 3 tbsp Extra Virgin Olive Oil
- 1/2 Medium Yellow Onion Diced
- 1 lb Boneless Skinless Chicken Breasts Diced
- 2 cloves Garlic Minced
- 1 cup uncooked long grain white rice
- 1 1/2 cups broccoli florets cut into bite size pieces
- 2 12 oz cans of low-sodium chicken broth
- 2 cups shredded extra sharp cheddar cheese
Instructions
- In a large skillet or pan, combine oniions in two tablespoons of olive oil over medium heat
- Add chicken, brown, then add garlic. Cook for an additional minute
- Push chicken to one side of pan and add 1 tablespoon extra virgin olive oil.
- Add uncooked rice, saute for a few minutes
- Add chicken broth and boil.
- Cook chicken and rice covered for 12 minutes.
- Sprinkle broccoli evenly over chicken and rice mixture, stir
- Continue to cook until broccoli and rice are tender, 7-10 minutes
- Remove from heat, sprinkle in half a cup of cheese
- Top with remaining cheese, let sit till melted.
- Serve!
