Deviled Egg Potato Salad

One of my favorite sides is potato salad, and one of my favorite apps is Deviled Eggs, so when I say this Deviled Egg Potato Salad is HEAVEN, I mean it! This salad goes great with any recipe, but we especially love it with our Best Ever Smoked Chicken Rub Recipe!

Pro Tip:

It can be kind of a tedious chore to chop up the celery and pickles into fine pieces, so try this Food Chopper! What we love about this food chopper is you can choose which grate to put in it and how fine to chop the food up without having to hit the top several times versus the regular food choppers.

Ingredients:

  • 9-12 hard boiled eggs, peeled
  • 1/4 cup shredded pimentos
  • 1/2 cup chopped onions
  • 1/2 cup mustard
  • 1/4 cup green peppers
  • 6 cups boiled potatoes, cubed
  • 1 tbsp. salt
  • 1 tbsp. paprika
  • 1 cup mayonnaise
  • 1/4 cup shredded celery
  • 1/2 cup shredded dill pickles
  • dill (optional)

Instructions:

  1. First, you are going to cut 9-12 boiled eggs in half and remove the yolk. Place those in a separate bowl and mix with 1 teaspoon of pickles, 1 teaspoon of mustard, 1 tablespoon of mayo and a dash of salt. Stiff the eggs with the yolk mixture and set aside. Pro tip: Use this Food Chopper to finely chop your celery and dill pickles!
  2. Then, you will mix your potatoes with the remaining ingredients. Flake your eggs with a fork and then add to your mixture. Top with paprika!

Deviled Eggs Potato Salad

Ingredients
