These Chicken Skinny Nachos are one of my favorite nacho recipes, and our kids absolutely love them! They are fast, easy, and cost effective!
One tool that I find to be extremely helpful with any recipe that uses shredded chicken is this chicken shredder! Once I found this, I have never used two forks to shred chicken since! Its great for soups, stews and casseroles! If you eat a lot of chicken tacos, this is a perfect, handy tool!
Ingredients you’ll need for Chicken Skinny Nachos
- Tortilla Chips (Try Wheat!)
- Chicken Breasts, Shredded
- Mexican Cheese Blend
- Can of Corn
- Black Beans
- Rotel Tomatoes
- Sour Cream
- Olive Oil
Instructions
The first thing you will want to do is cook your chicken breasts in a pan with a dab of olive oil. Shred it
After that, layer the tortilla chips, chicken breasts, corn, black beans, tomatoes and cheese on a baking sheet
Then, Bake in the oven 400 degrees for about 10 minutes or until cheese is melted
Finally, you will top with a dab of sour cream (and salsa if you wish) and serve warm!

You can also make your own chips or use a vegetable such as sweet potato or zucchini in place of corn chips. If you look around your chip aisle at the store you will see a lot of companies are offering healthy alternatives to your typical corn chip!

Try lean ground turkey! That is another healthy alternative such as chicken!
