I cannot get over this recipe! I absolutely LOVE chicken fajitas, and I LOVE soup, and I really love the two together! The best part? Chicken Fajita Soup is super simple to make! You could easily substitute chicken for steak or beef or even add cooked onions and peppers as well for a tasty change!
I think I brag up my 10qt Crockpot Express a lot on this blog, but It is absolutely amazing! We use it multiple times a week, as it lets you pressure cook, sterilize, slow cook, brown/sear, sauté, boil, simmer, and steam all in one! For this recipe, we are using this crockpot on the simple slow cook setting! You can set it on high or low and for as many hours as you need!
I also like to wait until the chicken is nearly done, about an hour before completely done and shred it then, that way, the flavors of the soup really soak up in the chicken. If you want to make supper a little easier, try substituting chicken breasts for Tyson Pulled Chicken Breast instead! All of the hard work is done!
The best part, is that this Chicken Fajita Soup is kid friendly! Its not super spicy but its full of flavor! We add some fritos corn chips to the top and our kids devour it!
Chicken Fajita Soup
Ingredients
- 2-3 Boneless, Skinless Chicken Breasts
- 2 Cans Condensed Cream of Chicken Soup
- 1 Can Cream of Celery Soup Optional
- 1 Cup Salsa
- 2 Cups Frozen Corn
- 15oz Can can Black Beans drained and rinsed
- 1 1/2 Cups water
- 1 Cup Shredded Cheddar Cheese
- Salt and Pepper to taste
- Corn Chips to top
- Sour Cream to top
Instructions
- Place Chicken in Crockpot
- Mix the rest of ingredients (except end “Optional Toppings”) in separate bowl & pour over chicken
- Cook 2-4 Hours on High or 4-6 Hours on High
- Shred Chicken before serving
- Top with your favorite toppings!
