Cheesy Broccoli Soup

Soup is a staple in our house, and this Cheesy Broccoli Soup is a FAVORITE! In these cold winter months, especially with how terrible this winter has been with snow and ice, it hits the spot and warms the soul! We have a lot of kids, so we tend to make a lot of soup! And my favorite is to freeze it! We use this big stock pan for our bigger batches!

Ingredients

  • 1 Small Onion, Diced
  • 3 Strips of Bacon, Diced
  • 1/4 Cup Flour
  • 4 Cups of Warm Milk
  • 1 Vegetable Bouillon Cube
  • Fresh Broccoli, Cut into smaller pieces (I bought one bundle, that was plenty)
  • 2 Cups Shredded Cheddar Cheese

Instructions

  1. Cook Bacon in a 4 quart pan until cooked.
  2. Remove from pan and drain on towel leaving fat in pan
  3. Cook onions until soft in pan
  4. Add Flour to the onion & bacon leftover mixture, stir well
  5. Mix in warm milk and bouillon cube, stir with whisk continually
  6. Add Broccoli, let mix come to a boil stirring frequently
  7. Reduce heat and cook until broccoli is tender.
  8. Remove from heat, stir in cheese until melted
  9. Serve!
