Derek is not a huge hot-dish fan, but loves meats like chicken, porkchops and burgers. With that said, I am always looking for fun sides to pair with our meals. Grated Parmesan Roasted Carrots is one of my FAV go to sides and works with nearly any meat choice. Its such a simple and fast recipe and healthy too!
What you will need
- Carrots – Washed with the tops trimmed off
- Avocado oil or Olive Oil- This helps the carrots carmelize.
- Garlic finally chopped
- Fresh Parmesan Cheese, Grated
- Butter
Instructions
- First, you are going to combine carrots, olive or avocado oil, butter, garlic, and 1/3 cup of parmesan cheese. Toss well until evenly coated. You could also wait to add the parmesan cheese at the end
- Arranging the carrots in a single layer on a pan, you will bake at 400F for 25-30 minutes until tender. Flip halfway through to cook evenly.
Other Tips:
- Parsnips cook very similar to carrots and would be a nice addition to this recipe!
- I use garlic and salt, but try dried herbs, garlic powder or even ranch dressing powder.
Storing and Freezing Instructions
How to Store
Store leftovers in an container in the fridge for up to 3-4 days.
How to Reheat
Microwave carrots for 2-3 minutes until warmed through. You could also bake them in the oven but they may soften.
How to Freeze
I do not recommend freezing them as they lose flavor, however they can be stored in an airtight ziplock bag for up to 3 months
Roasted Parmesan Garlic Carrots
Ingredients
- 8-10 Carrots
- 2 tbsp Butter Melted
- 2 tsp Garlic Minced
- 4 tbsp Parmesan Cheese Fresh, Chopped
- 1 tbsp avocado or olive oil
Instructions
- Preheat oven to 400 degrees F.
- Mix melted butter, Avocado or Olive Oil, and garlic together
- Coat Carrots With Butter and Garlic Mixture,
- Place Carrots on Baking Sheet, drizzle remaining Butter and Garlic Mixture Together
- Roast in Oven for 20 Minutes, flipping halfway through
- Top with Parmesan Cheese and Roast another 10 minutes
- Serve!
