I am absolutely in love with taco tortilla soup right now and it is so incredibly easy to make! The kids LOVE it and a little bit really does go along way! It is incredibly budget friendly, and many of the items you will already find in your pantry or are closet staples!
I originally used Tastefully Simple Chicken Tortilla Soup Mix, but I ran out of that and used Bear Creeks Tortilla Soup Mix and it was excellent as well! But I imagine just about any tortilla soup mix would work well! I also use Garlic Garlic from tastefully simple, but I have made it with minced garlic as well. With Tastefully Simple Garlic Garlic, I used 1 tablespoon and when I made it with Minced Garlic, I actually used 1 tablespoon but ended up putting a pinch more in! I do tend to lean towards Tastefully Simple because a little bit goes a long way! The only downfall is if I am craving something tonight, and I don’t have it in my cupboard, I have to wait for it to ship instead of just going to the store to grab what I need! So I will leave replacements for the tastefully simple items in the actual recipe for you!
I have to take a moment to tell you how much I am loving my Rachal Ray Cookware! You guys, for less than $150, it is a must have budget friendly cookware set! I cannot believe how much I absolutely love it! We have some pretty expensive cookware, and I still go to this set every time! I highly recommend it for any level of chef, but this mama is happy!
Taco Tortilla Soup
Ingredients
- 1 lb 85% lean ground beef
- 1 tbsp minced garlic OR Tastefully Simple Garlic Garlic
- 8 cups water
- 2 cups rotini pasta
- 1 14.5oz can diced tomatoes, undrained
- 1 cup whole corn kernals
- Topping such as sour cream, shredded cheese, green onions, and fritos chips
Instructions
- In a large saucepan, cook and crumble beef and minced garlic over medium-high heat, until no longer pink, about 6-8 minutes, drain
- Stir in water and Tortilla Soup Mix. Bring to a boil; reduce heat and simmer 10 minutes, stirring occasionally
- Stir in pasta, tomatoes and corn. Continue simmering 10-12 minutes or until pasta is done, stirring occasionally.
- Serve with desired toppings!
